Stay With Me: The Recipes, Part III

Stay With Me will be available in only two months (Kindle pre-orders in one)! In May, I wrote about the music that inspired the book, and in April, I blogged about the settings. In June, I shared several of the recipes for the delicious treats mentioned in the book. The second round of recipes posted in July, and this is the final recipe installment!


Homemade Peach Pie

This seasonal treat serves as dessert for the first dinner Chris prepares for Rebecca. It is perfect for this time of year in Pennsylvania. Here’s a tip: Ripe peaches peel easily after being dipped in boiling water for 10-20 seconds.

I have not yet mastered the art of making pie crust from scratch. I admit I find it simpler to pick up a refrigerated, store-bought crust. That’s what I used for this recipe.

Classic Cheesecake

Rebecca brings this cheesecake for dessert with Chris’s brother and sister-in-law. It’s the only food that survives his sister-in-law’s less-than-stellar attempt at a home-cooked meal.

I baked this cake on National Cheesecake Day (July 30 – Mark you calendar for next year!). My springform pan was too small, I was out of aluminum foil, and I used up all the fresh lemons on the Bundt cake (see below). To top it off, the kids minding the timer left the house, and the cake’s total baking time remains a mystery. Despite all that, it was delicious! Better than what’s served in restaurants, according to my family.

Super Lemon Bundt Cake

This recipe and the two that follow are part of a baking binge toward the end of the book. You’ll have to read Stay With Me to find out why Rebecca resorts to what her sister calls “maniacal baking.” This cake exceeded my expectations – it is “super.” Moist and delicious. It makes for a lovely presentation, too, so it’s great for company or a bake sale.Super Lemon Bundt Cake

Marble Cheesecake Brownies

Brownies are one of the few baked goods I do not make from scratch. I use this Betty Crocker mix with Hershey’s chocolate available at Sam’s Club. This simple recipe works easily with a boxed mix and comes out delicious, especially warm with a scoop of ice cream! My son took care of the marble swirling.
